When it comes to comfort food my family doesn’t always crave a big bowl of stew or a hearty bowl of pasta. Sometimes they actually ask for healthier options that really nourish them. This is one of the recipes my boys clamor for and it’s great if you’d like to expand your recipe repertoire. I love it because it looks and tastes like a meal you’d enjoy at a restaurant, yet you get to enjoy it in the comfort of your own home!
This recipe calls for one pound of chicken thighs, but you can easily double it for a larger crowd. To make it even more delicious, fill your bowl with your choice of greens, lentils, brown rice, quinoa, feta, tzatziki, hummus, olives, cucumbers or tomatoes.
