Chicken Kabobs on Rosemary Skewers

Recipe by Mike Allen

Thick-branched sprigs of fresh rosemary
Chicken breasts or thighs
Red onion, green pepper, cherry tomatoes, zucchini, etc.
Ready-made Italian salad dressing

  1. Trim the leaves off the rosemary sprigs, leaving only those at the top for decorative and aromatic purposes.
  2. Cut chicken into cubes and combine in a bowl with the vegetables suggested here or those of your choosing.
  3. Marinade for at least an hour in a ready-made Italian salad dressing or one you prefer, then skewer your ingredients on the rosemary sprig and grill. Makes a great appetizer, too!
