Tailgating at polo is just as important as the match itself, so it’s a time to showcase your culinary skills complete with a gracious table scape and china place settings. Not exactly Julia Child in the kitchen? Make what you can then fill in with gourmet-to- go.

No grills or fires are allowed on polo grounds, so choose a menu that can be served chilled from a cooler or at room temperature. Focus on keeping the food safe by opting for recipes with generous amounts of acidic ingredients such as sugar, lemon juice, and vinegar-y things like pickles.

Whether your tailgate style is casual and low key or elegant and fancy, make it one that will knock the socks off your guests and have your neighboring tailgaters drooling! Here’s my idea of a sure-to-please lineup, with a couple of the recipes included.
